Korean fermented fish (Jeong-eo-ri jeotgal). Using sprats which are a kind of large anchovy quite easy to get hold of in UK unlike anchovies. Christmas turkey came early this year. Brined with whiskey and molasses for 36hrs then smoked with fruit wood on the pellet grill for 6hrs. Yum yum.
